Once filled, the maturing spirit remains undistrubed in the same cask for a full twelve years. It is the oak that makes the greatest contribution to the quality, natural colour and distinctive aromas and flavours at the heart of this single malt whisky. It is a uniquely complex combination of oak casks that delivers the extraordinarily smooth and delicate character of The Macallan Triple Cask Matured 12 years old. A trinity of spirits, matured individually in sherry seasoned European oak casks, sherry seasoned American oak casks and ex-bourbon American oak casks and then exquisitely and expertly married together to create a vibrant single malt bursting with citrus fruits, vanilla and fresh oak flavours. De 12 jaar oude Double Cask heeft de perfecte smaakbalans door exclusief gebruik van ex-sherryvaten van Amerikaans en Europees eiken. Zacht, zoet en gebalanceerd. De bepalende stijl komt van het Amerikaans eikenhout dat citrus en lichte tonen van eiken voortbrengt. Dit wordt gebalanceerd door het Macallankarakter van rijk fruit en specerijen. The Macallan verscheept Amerikaans eikenhout duizenden kilometers, vanuit de Verenigde Staten naar Spanje. Van het hout worden vaten gemaakt die in Spanje gevuld en gelagerd worden met sherry voordat ze naar de Macallandistilleerderij in Schotland worden verscheept. De Macallanwhisky's rijpen minimaal 12 jaar in deze sherryvaten alvorens ze samengevoegd worden met whisky's die hebben gerijpt in ex-sherryvaten van Europees eiken.

The Macallan Rare Cask is het toonbeeld van complexiteit en diepgang. De Whisky komt uit 16 verschillende typen vaten en minder dan 0,1% van alle rijpende whisky in vaten op Easter Elchies House is geschikt bevonden voor het dragen van de naam ?Rare Cask'. Juist deze zeldzaamheid is de essentie van de whisky. Een deel van deze vaten zal nooit meer gebruikt of gekocht worden door The Macallan. De whisky dankt zijn fantastisch rijke kleur en volle tonen aan de samenvoeging van eikenhouten sherryvaten van Amerikaanse en van Spaanse origine. Een groot deel van deze vaten is nog nooit eerder gebruikt, de zogenaamde ?first-fill-vaten'. Dit heeft een zeer positieve invloed op de smaak en kleur.
